PUNKY PIIEEE!!!

this was my first ever pie!! and let me say....YUM-O! I made a pie and 6 mini pies! It was so much fun! The next pie I'll attempt is pecan. :)




p.s. try a scoop of cinnamon ice cream and some redi-whip on your pumpkin pie...its awesomee!

I had the wonderful privilege of making cupcakes for my friend Hana. On Friday, November 18th, Hana became a naturalized United States Citizen! I am so proud of her for earning that and going through everything she went through to earn that.

I took a class over my fall break on cake pops and these were what I made. mine are the 6 in the right hand corner (the ones by the TOMS flag cake pop)

Peanut Butter and Chocolate Cupcakes!



mini chocolate cup cakes with a peanut butter icing and part of a peanut butter cup on top.

I made these for a new years eve party and they were a hit!! I didn't have a lot of time so I just bought a cake mix but I did home make the icing.

PB icing Recipe.

Ingredients:
8 oz cream cheese, at room temperature
4 tbsp unsalted butter, softened
2/3 cup creamy peanut butter
3-1/4 cup powdered sugar
1 cup frozen whipped topping, thawed

if you read the whipped topping part and think I'm crazy..trust me. its delicious!!

1. in an electric mixer, beat cream cheese, butter, and peanut butter together on medium speed until smooth.
2. Slowly add powdered sugar until well combined.
3. Gently mix in whipped topping until smooth and fluffy.

Cupcakes:

I used "nut party cups" for my cupcakes and they were easier then a mini cupcake pan! you fill them 1/2 full and then pop them in the oven on a cookie sheet! its that easy!
*WARNING* cupcakes will overflow if filled up more and if they are close they will stick together! (learned that the hard way:)

Once cupcakes are completely cooled, use a large star tip to pipe the frosting and top with Reese's peanut butter cup pieces.

on the inside:
marble cake! vanilla and chocolate cake mix, 2 pints of ice cream (1 pint chocolate, 1 vanilla), 6 eggs (3 for each mix), and 2 cups of water(1 cup for each mix) and chocolate and vanilla icing! Covered in homemade marshmallow fondant!

This was made for a friends baby shower! The shower was super fun!! Lots and lots of cute clothes and baby stuff, that boy is going to be spoiled!! I didn’t have a blue necklace for most of the time because I said baby too much...oh well :)
